Poitín (or Potcheen), the pure liquor from the distillery, which is not yet allowed to be called whiskey because it has not been able to mature in the cask for at least 3 years.
The spirit was first produced by the Irish several centuries ago and was a forerunner of "uisce beatha" and thus of Irish whiskey.

Ballykeefe produces spirits with eco-friendly practices at the heart of its production methods, including utilizing heat from the refrigeration system in the visitor center and distillery staff areas, feeding stillage to the farm's livestock and more.

Tip: A nice alternative to gin and tastes particularly good with the Mediterranean tonic from Fevertree. It has a wonderfully earthy, almost peaty quality that one expects from whiskey but is quite surprising in a white spirit.
