The Quiet Rebels series is dedicated to the people who are making a significant contribution to shaping Nc'nean. This year, Amy, the sustainability officer, takes center stage. She has selected her favorite cask combinations to create a whisky with a fruity, jam-like character and hints of toasted spices.
Eco-friendly principles are a central part of Amy's philosophy, so her creation includes not only STR red wine and ex-bourbon casks, but also whisky aged in organic Maury casks - a French fortified wine produced in a similar way to port.
