Daftmill is a farm distillery owned and operated by the Cuthbert family.
The distillery is only operational during the farm's quiet times of mid-summer and winter, distilling only a few casks per year.
When Francis Cuthbert does not distill, then he looks after the estate and grows the malting barley from which this Lowland whiskey is made.

The basis for the Lowland Single Malt is barley, which Francis Cuthbert refers to the southern fields of the farm in 2010. The Optic variety grown there was used for the last time in the summer of 2010 for distillation.
The limited whiskey matured for eleven years in 25 first-fill exBourbon barrels from the Clermont Springs Distillery in Kentucky.

TASTE NOTES:
Again vanilla and ripe pear, some peppery spiciness, slightly bitter notes and wood. Complemented by pastry dough notes and in the background lychee and some Asian plum with tropical fruits.
