Daftmill is a farm distillery owned and operated by the Cuthbert family.
The distillery is only operational during the farm's quiet times of mid-summer and winter, distilling only a few casks per year.
When Francis Cuthbert does not distill, then he tends the estate and grows the malting barley from which this Lowland whiskey is made.
The Optic barley variety was grown in the South Fields and harvested in the last week of August 2006 . It was then stored on the farm to be malted in Alloa in the summer of 2007.
This bottling consists of the following first fill ex-Bourbon casks: 047/2007, 048/2007, 049/2007, 050/ 2007, 051/2007, 052/2007 and 053/2007.
TASTE NOTES:
Aromas of freshly baked sponge cake, cardamom and peach skin lead to a floral note reminiscent of broom flowers. The palate is vibrant with fresh vanilla, fruit, toasted almonds and a juicy tangerine rim on the back palate that evolves into a spicy finish with just a hint of mashed banana.
