Daftmill is a farm distillery owned and operated by the Cuthbert family.
The distillery is only operational during the farm's quiet times of mid-summer and winter, distilling only a few casks per year.
When Francis Cuthbert does not distill, then he tends the estate and grows the malting barley from which this Lowland whiskey is made.
The Optic barley variety was grown in the South Fields and harvested in the last week of August 2006 . It was then stored on the farm to be malted in Alloa in the summer of 2007.
This first fill ex-Oloroso butt and three ex-bourbon casks that make up this bottling were made into the first distilled and bottled during the two weeks of August 2009. This is our first release to feature whiskey aged in both bourbon and sherry casks. Barrels 047/2009, 048/2009, 050/2009 & 052/2009
TASTE NOTES:
The nose is quite timid at first and this dram benefits from a little respite in the glass, be patient rewarded with a harmonious balance of fresh tropical fruits reminiscent of mango and cola cubes, with thicker aromas of dried figs and cigar boxes. The palate is wonderfully tangy, giving off notes of clootie dumpling and lemon zest, evolving into something smoother with notes of toffee and Fraserburgh butter. The finish is extraordinary as the former sherry casks really shine through and waves of fresh, fiery gingerbread linger.
