Daftmill is a farm distillery owned and operated by the Cuthbert family.
The distillery is only operational during the farm's quiet times of mid-summer and winter, distilling only a few casks per year.
When Francis Cuthbert does not distill, then he tends the estate and grows the malting barley from which this Lowland whiskey is made.
The Optic barley variety was grown in the South Fields and harvested in the last week of August 2006 . It was then stored on the farm to be malted in Alloa in the summer of 2007.
A total of 23 first fill ex-bourbon casks were used for this batch. They were bottled between 02/14/2008 and 04/28/2008 before being left to mature in the upper level of warehouse no. 1.
TASTE NOTES:
A deep vanilla aroma is immediately present one that is reminiscent of crème brûlée, with some canned peach, dried cocoa powder and a delicate grassy note that builds up. On the palate fresh fruit explodes with green apples, pears and some melon evolving into soft peach and a hint of tropics, there is also a pleasant herbaceous, almost earthy note on the mid-palate. Oak reappears on the finish, offering vanilla beans, clove, cinnamon and some melted honey.
