Daftmill is a farm distillery owned and operated by the Cuthbert family.
The distillery is only operational during the farm's quiet times of mid-summer and winter, distilling only a few casks per year.
When Francis Cuthbert, he then tends the estate and grows the malting barley from which this Lowland whiskey is made.
The Chariot barley harvested on August 31, 2004 at the Dam Park and Curling Pond the farm was among the last to be malted in Fife by Robert Kilgour & Co before they closed.
Distilled and bottled in the summer of 2006, these Heaven Hill ex-bourbon casks have in Kentucky for almost 12 years patiently on the bottom floor of Warehouse No. 1 waited.
TASTE NOTES:
The nose opens with freshly baked Victoria sponge cake, curry leaves and cinnamon toffee, with canned peaches and warm gorse blossom evolving over time in the glass. These notes continue on the palate but are accompanied by lemon zest, melted honey on toast, jam and vanilla beans, with wood polish and marzipan appearing on the back palate. Waves of honey and spicy oak linger on the finish, with fruit candies appearing after about a minute. This is an excellent dram for a warm summer day.
