Caol Ila [Cull Eela] is Gaelic for 'The Sound of Islay', the strait separating the Hebridean islands of Islay and Jura.
Somewhat hidden on the rough east coast, fine smoky whiskeys have been produced there by the islanders since 1846.
The barley used is still malted in Port Ellen, the pure spring water comes from the nearby Loch Nam Ban limestone.
The Caol Ila 12 Years Old Islay Single Malt Scotch Whisky matures in oak barrels for 12 years.
Nose: Fresh, smoky, oily, sea air, peppermint.
Flavour: Smoky, spicy, notes of cigars, smoked ham.
Finish: Long persistent, peppery, sweet smoke.
