The Saint Aubin distillery in Mauritius is the pioneer of pure sugar cane juice rum in Mauritius. Established in 2003, the winery cultivates 750 hectares of sugar cane, the majority of which is red cane, which is harvested entirely by hand.
The CDI is aged for 14 years, the last 16 months of which in a sherry cask.
Nose: A powerful camphor nose with hints of almonds, candied plums, Mirabelle plums and bananas. Very expressive and aromatic.
Mouth: Woody, spicy, notes of menthol, cocoa, passion fruit and a hint of rancio usually found in aged cognac.
Finish: The bitterness and the toasted side harmonize very good together.
