Daftmill is a farm distillery owned and operated by the Cuthbert family.
The distillery is only operational during the farm's quiet times of mid-summer and winter, distilling only a few casks per year.
When Francis Cuthbert does not distill, then he tends the estate and grows the malting barley from which this Lowland whiskey is made.
The Optic barley variety was grown in the South Fields and harvested in the last week of August 2006 . It was then stored on the farm to be malted in Alloa in the summer of 2007.
These seven first-fill ex-bourbon casks that make up this bottling were distilled and bottled in the summer of 2008. Barrels 040/2008, 046/2008, 057/2008, 059/2008, 061/2008, 063/2008 and 064/2008.
TASTE NOTES:
The nose opens with grated Granny -Smith apple, dried vanilla beans and apricot jam, some tangy lemon notes and a buttery shortbread note develop with time in the glass. The palate has a nice, delicate mouthfeel that adds pleasant oaky spiciness: cardamom and lots of custard. Good balance between fruity distillate and wood. Beautiful, long finish with waves of American oak, shortbread and some marzipan/almond notes at the end.
